What's in the set
PAUDIN 8" Chef Knife (model N1): high-carbon 5Cr15MoV stainless steel blade, about 2 mm thick, with a pakkawood handle. It comes with a blade sheath and a gift box, and the PAUDIN logo is etched on the blade. The wavy pattern on the blade is laser-etched and only decorative. It is not real Damascus steel.
Rolling Knife Sharpener Kit: a rolling sharpener with a 400-grit diamond disc and a 3000-grit ceramic honing disc, a magnetic 15°/20° angle guide and a leather strop.
The PAUDIN knife ships with an edge of about 13° per side. Use the 15° side of the guide. Sharpening on it will gradually give the knife a slightly sturdier 15° edge.
Care
Hand wash and dry the knife right away. Not for the dishwasher. Wipe the sharpener discs with a dry cloth.
